Charquekán is a Chilean dish, containing potatoes, minced meat, pumpkin, white corn, onion and sometimes peas. Charquekán is dry llama meat (similar to beef jerky). This way of preserving meat made it possible for ancient cultures to store food. Today Charquecán Orureño (From Oruro, Bolivia) is one of the most famous ways to prepare this meat. It consists of the Charque being boiled and fried and you serve it with boiled potatoes, white corn, hard boiled egg and fresh cheese. All is complemented with llajua, a spicy sauce made mainly of tomato and locoto (a cousin of chili). Original recipe at Gastronomía Bolivia
