Chechil (Armenian: Չեչիլ,Turkish: Çeçil/ Tel Peyniri) is a brined string cheese that originated in Armenia and Anatolia[1]. It has a consistency approximating that of suluguni or mozarella and is produced in the form of dense strings, rolled up in a figure eight of thick braid-shaped ropes.
Chechil is a traditional Armenian cheese and is one of the cheeses produced in Eastern Anatolia. It is also popular in Turkey.[2]
Chechil is matured in brine and often smoked before consumption. It is sometimes mixed with farmer cheese or various hard cheeses and stored in jars or wine skins.
