Michel's Patisserie is a chain of bakery-style food outlets selling cakes, pies, savouries and espresso coffee. The company is a franchise system that was founded in 1988 and is based in Australia with over 360 retail outlets in all Australian states and territories except Northern Territory and Tasmania as well as New Zealand and China

There are more than 360 Michel’s Patisserie stores operating across Australia, employing about 4,000 staff and serving around 36 million cups of coffee and 9.5 million slices of cake each year. The Michel’s Patisserie franchise network is owned and managed by Retail Food Group (RFG).

The Michel's Story

Michel’s Patisserie is 100% Australian owned and was founded by Noel Carroll and Noel Roberts in 1988. Their concept was simple: a central bakery bakes the product and distributes fresh daily to the retail outlets, who in turn display and sell to customers.[1]

After two years of painstaking research into all facets of the concept including recipes, distribution, store design and layout, marketing and training, the system was tested under full market conditions in stores located at Castlecrag and Newport before being launched as a complete Franchise System in 1990.

Some 16 years later, in February 2006, Michel's Patisserie conducted a management buy-out, and merged with its master franchisee in Queensland and Victoria to create a single national franchise business.

The business is well established and resourced for continued growth within Australia. There is a strong focus on marketing and brand direction together with the continued enhancement of product quality and introduction of new products to the range. With Michel’s Patisserie’s prominent brand, successful franchise system and innovative distribution model as key strengths, the business is positioned well for significant growth over coming years.[2]

Michel’s Patisserie is one of Australia’s most successful patisserie and franchise groups with over 360 stores throughout Australia as well as outlets in, China and New Zealand. Michel’s has aggressive plans for new store openings in metropolitan and regional areas throughout Australia.

Michel's Espresso

Michel’s Patisserie recognises the importance of coffee as an accompaniment to a slice of cake, and the growing coffee loving trend in Australia. In 1999, Michel's Espresso, the in-house coffee roasting and training facility, was born.

Michel’s Espresso has set the pace not only for the coffee franchising industry, but also for the coffee industry in Australia and beyond. [3]

Michel's internationally certified professional coffee tasters source the highest grade beans from specially selected coffee growers across the globe. In fact, the unique blend is sourced from a boutique grower in New South Wales, as well as those in Nicaragua, Brazil and Ethiopia.

Michel’s Patisserie’s coffee blend is full-bodied and rich in flavour which appeals to the Australian palette. Michel’s Patisserie’s coffee blend is designed to stay away from the North American habit of disguising bitterness with sweet syrup flavorings, and instead to complement milk-based cappuccinos, flat whites and pastries. Michel’s baristas learn the tricks of the trade at Michel’s Patisserie’s national barista training course to ensure consistent quality and taste. Michel's Baristas go through rigorous written and practical training programs before they can make coffee in store. Working hard to develop the skills and proficiencies of all the staff – from making the best soy macchiato to creating the tastiest double short black.[4]
