The 121st All-Ireland Senior Hurling Championship commenced in May 2007 and was retained by holders Kilkenny after overwhelming Limerick in the final on Sunday 2nd September.

Format

The format of the 2007 championship remains the same as in 2006:

12 counties participate in Tier 1 of the 2007 Championship. These teams are as follows:
* Leinster: Dublin, Kilkenny, Laois, Offaly, Wexford
* Munster: Clare, Cork, Limerick, Tipperary, Waterford
* Connacht: Galway
* Ulster: Antrim

The Leinster and Munster championships will be played as usual. The Leinster and Munster champions and runners-up advance directly to the All-Ireland Quarter-Finals. The six remaining teams in Leinster and Munster join Galway and Antrim in the eight-county All-Ireland qualifier series. The eight qualifier teams are divided into two groups of four teams each. Each team will play the others in the group (3 games for each county):

*Group A:
* Antrim
* Clare
* Galway
* Laois
*Group B:
* Cork
* Dublin
* Offaly
* Tipperary

The top two teams in each group join the Leinster winners and runners-up and the Munster winners and runners-up in the All-Ireland Quarter-Finals. The pairings for these four games are as follows:

*(1) Leinster winners V. runners-up in one Qualifier group
*(2) Munster winners V. runners-up in the other Qualifier group
*(3) Leinster runners-up V. winners of one Qualifier group
*(4) Munster runners-up V. winners of the other Qualifier group
