Oreilles de crisse is a traditional Quebec dish consisting of deep-fried smoked pork jowls. It is generally served at cabanes à sucre ("cabane a sucre" or sugar shacks) in spring time, often, but not always, topped with a generous quantity of maple syrup.
The word crisse is the Quebec French profanity word for "Christ". The name of the dish thus literally translates to "Christ's ears".
