Pollock and southern Grant Parish have been booming in recent years with residential and business growth. The population of Pollock has increased drastically since the last census as a result of the annexation of the land surrounding a federal prison, theUnited States Penitentiary, Pollock .Pollock is named for
Oliver Pollock , one of the largest financial donors to the cause of theAmerican Revolution . He used his influence to convince the Spanish to drive the British fromBaton Rouge . When Pollock's funds ran short, he pledged his credit to purchase needed supplies for the American forces.Geography

census GR|2 of 2000, there were 376 people, 157 households, and 108 families residing in the town. Thepopulation density was 298.7 people per square mile (115.2/km²). There were 204 housing units at an average density of 162.1/sq mi (62.5/km²). The racial makeup of the town was 97.87% White, 0.27% Native American, 0.53% Asian, and 1.33% from two or more races. Hispanic or Latino of any race were 1.86% of the population.There were 157 households out of which 36.9% had children under the age of 18 living with them, 48.4% were married couples living together, 18.5% had a female householder with no husband present, and 30.6% were non-families. 30.6% of all households were made up of individuals and 15.9% had someone living alone who was 65 years of age or older. The average household size was 2.39 and the average family size was 2.98.
In the town the population was spread out with 28.5% under the age of 18, 7.7% from 18 to 24, 25.5% from 25 to 44, 22.6% from 45 to 64, and 15.7% who were 65 years of age or older. The median age was 38 years. For every 100 females there were 91.8 males. For every 100 females age 18 and over, there were 83.0 males.
