Rappie pie

Rappie pie is a traditional Acadian meal. Its name is derived from the French "patates râpées" meaning "grated potatoes". Potatoes are grated and the water removed, a hot broth made from chicken or pork is then added along with meat and onions and then layered over with more of the grated potatoes to make a casserole-like dish.

Meat is first cooked (chicken, beef or both, sometimes game is also used) with salt, pepper and onions. When cooked, take meat out of pot, saving the juice. Grate and squeeze dry potatoes, measuring the amount of moisture removed and replace the same amount with boiling meat stock, stirring vigorously to avoid lumps. Then pour into a greased baking dish, alternating layers of meat and potatoes. When finished, put cubes of salted pork rind on top and bake until crispy and golden brown.
