Khabidzgina, also known as Ossuri khachapuri, is a type of khachapuri that is consumed in Ossetia. It is common in regions of Georgia with a large Ossetian population, such as Akhalgori. Preparation is similar to Imeruli khachapuri except of the filling, which is mashed potatoes mixed with cheese. This might be the result of very salty cheese that is produced in the mountainous regions of Georgia. Also, instead of butter, a vegetable shortening called erbo is used.
