Basundi

Basundi is an Indian dessert. It is a dense sweetened paste made by boiling milk on low heat for a long time. Milk is usually reduced by half which takes 1 to 2 hours of boiling.

Additionally heavy cream might be added during boiling to make it thicker. Once reduced, a little sugar, cardamom, and/or saffron are added. Basundi is served chilled, often garnished with slices of almonds and pistachios.

It is often made on Hindu festivals such as Kali Chaudas and Bhaibeej
