Zamorano cheese is a
sheep's milk cheese made in theCastile-León region of Spain. This is a hard cheese which is typically aged about 6 months. The cheeses are turned often, and rubbed with olive oil, giving the cheese its characteristic dark color. This cheese owes its flavor character to the breeds of sheep predominant in the region (Churra and Castellana), the climate conditions (cold and humid) and its long aging in cellars.Features
Zamorano has a sharp, mildly gamey, sheep's milk flavor. It is full flavored, buttery, slightly piquant with a nutty aftertaste. The shape is cylindrical with an engraved herringbone rind, similar to Castellano or Manchego. The size is about 6 lb. on average.
Zamorano cheese is protected by its Denominación de Origen, which specifies its production, ingredients, and maturation.
