Mì Quảng A bowl of Mì Quảng Vietnamese name Quốc ngữ mì quảng Mì Quảng (also spelled mỳ Quảng), (literally: Quảng style noodle) is a Vietnamese noodle dish that is originated from the provinces of Quang Nam and Da Nang, in the South Central Coast of Vietnam. In the region, it is one of the most popular dishes, and it is served in various occasions such as family party, death anniversary, and Tết. Mì Quảng can also be found in many restaurants around the country.

Ingredients
In its best known form, the dish is most often made from wide rice noodles called lá mì and the yellow kind of lá mì is colored by the addition of turmeric. These noodles are typically made at home. The noodles are cooked and served with seasoned pork chops or chicken, half a hard-boiled egg, sauteed shrimp, peanuts, chả (a kind of beef sausage), chili pepper, fresh vegetables including: water mint (rau húng lủi), basil, Ipomoea aquatica, Vietnamese coriander, shaved banana flower (bắp chuối bào), and a kind of lettuce), and pieces of bánh tráng, a kind of rice cracker. These ingredients may vary, but peanut and bánh tráng are most commonly found in Mì Quảng and make the dish special, distinguishing the dish from other kinds of noodle.
Cooking
The main ingredients of the dish are noodles, meat and vegetables. Smooth white noodles are placed above a bed of vegetables in a bowl, then come meat, shrimp and finally broth which is made from the pork bone- or chicken-stewed water is added. Unlike other famous dishes such as beef noodle soup in Hue city or Pho in Ha Noi capital, the broth is poured much enough to moisten the noodles. Quang noodle is served with crushed dried peanuts, bánh đa, herbs, lemons, and chilli. There are two main varieties offering people different choices including Quang noodle containing meat and the other containing chicken.

Mì Quảng is typically served slightly warm.
Cultural aspects
There is a Vietnamese saying about this dish:
“ Thương nhau múc bát chè xanh, Làm tô mì Quảng anh xơi cho cùng.
” This couplet describes a girl from Quảng Nam, a province on Vietnam's South Central Coast, who warmly invites her lover to drink a cup of tea and a bowl of mì Quảng, to show him the depth of her love for him. In her opinion, mì Quảng and tea are food and drink worthy of being served in this context.
