baijiu " (distilled liquor) made fromsorghum , produced in thePeople's Republic of China . Its official name is Red Star Er Guo Tou Jiu. It is 112 Proof, which is 56%alcohol by volume."Er guo tou" means "second distillation" (literally "head of the second pot"), which indicates its level of purity.
