Maricel Presilla is a chef, culinary historian, and author. She was a two-time James Beard Award nominee as Best Chef, Northeast and headed the kitchen at Cucharama in Hoboken, New Jersey [1] and is also chef at Zafra. She specializes in the foods of Latin America and Spain and "holds a doctorate in medieval Spanish history from New York University and has received formal training in cultural anthropology."[2] She has studied tropical crops, cacao and vanilla agriculture, as well as chocolate production and "is the president of Gran Cacao Company a Latin American food research and marketing company that specializes in the sale of premium cacao beans from Latin America."[3]
