The Due Ancore brand is produced by the Coltellerie Marcello Beltrame, a knife commercial manufacturer and distributor operating in the town of Maniago, in the Province of Pordenone, Italy. The company specializes in the production of professional and luxury cutlery. Most of its production is exported.

History
The Coltellerie Marcello Beltrame was established by Marcello Beltrame in 1953, separating from an expanded family-owned knife manufacturer that operated since 1885. The Due Ancore brand originated in the family in 1912 and was owned by the new company which started producing cutlery with this brand.
The cutlery production of the family traces origins back to the local tradition of knife making in Maniago, generated in the 15th century under the control of the Venetian Republic, which acquired most of its knives and swords in the town of Maniago.[1]
The production of the new company specialized in professional cutlery for chefs and butchers, in addition to traditional items for the construction and farming sectors. The plant was innovated purchasing new machinery and building a new production site in 1978, still to present its headquarter.
Since 2009 the Due Ancore brand aims to expand its client range adding a new production of luxury knives and accessories to the traditional professional cutlery line.
Production
The Coltellerie Marcello Beltrame produces two lines of cutlery, the professional line and the luxury line.
Professional Cutlery
The traditional range of production of the company is constituted by professional knives and other food preparation tools. It includes 0.4 to 3.5-kg cleavers, knives for butchering, knives and spatulas for kitchens and bakeries, cheese knives, carving forks and bonding knives. The company has implemented various innovations as it relates with food safety and hygiene in the recent years, such as switching the production of wood handles to PP (polypropylene) or POM (polyoxymethylene). The blades are made using molybdenum/vanadium stainless steel which has an high carbon content.
Knives & Beyond - Luxury Knives
The Knives & Beyond line is destined to high end niche markets, using luxury materials (blades in molybdenum/vanadium stainless steel or Damascus steel and handles in wood or buffalo horn) and sophisticated designs presented in particular packaging confections.The range includes chef’s knives, paring knives, santoku knives, bread knives, carving knives and steak knives sets, cheese-tasting sets, manicure and shaving sets, as well as cigar cutters, pocket knives, and cutting boards.
