Donkey Burger (Chinese: 驴肉火烧; pinyin: lǘròu huǒshāo) is a hot sandwich commonly eaten in Baoding, China, where it is considered the local specialty food,^[1] as well as other places in China. Savory chopped or shredded donkey meat is placed between two buns and eaten as a snack or as part of a meal. Donkey burgers are a popular street food, but can also be found on the menus of high-end restaurants. Two famous Donkey Burger restaurants are "Great Flavor" (好滋味) and "Old Donkey Head" (老驴头).^[2] A well-known saying, especially in Baoding, is "In Heaven there is dragon meat, on Earth there is donkey meat" (天上龙肉，地上驴肉). The "dragon" character is actually an abbreviation for a certain type of pheasant like bird.
