Gubbeen cheese

Gubbeen cheese is a washed rind cow's milk cheese. It ranges from gentle and milky to pungent and savoury depending on its age. Texture is smooth and pliant - a little like a firm Edam.

It is made by the Ferguson family in Schull, West Cork, Ireland.
