Saucier

A Saucier IPA| [sosˈje] is a position in the classical brigade style kitchen, which is still used in large commercial kitchens such as some restaurants. It can be translated into English as "sauce chef". This position prepares sauces, stews and hot hors d'œuvres and sautés food to order. Although it is the highest position of the station cooks, the saucier is still considered subordinate to the chef and the sous-chef.

Escoffier definition

In Georges Auguste Escoffier's system of the classic kitchen brigade, outlined in his book Le Guide Culinaire, a saucier is "responsible for all sautéed items and most sauces."

Name of pan

A saucier also refers to the type of dish that sauces are made in. A saucier (also called a chef's pan) is characterized by sloping sides. The sides allow easy whisking as well as pooling of liquids which help to mimic smaller pan sizes.

In popular culture

In the film Apocalypse Now, Engineman 2nd Class Jay "Chef" Hicks is a "saucier" from New Orleans, serving on board a patrol boat headed up river in Vietnam. He tries to find some mangos in the jungle to make sauce from. Later in the film (in the Redux version) the crew of his patrol boat encounters a holdout French colonial plantation, where he feels much more comfortable than in the jungle, and can skillfully regard the french cuisine they serve.

"Chef," Frederic Forrest's character in the film "Apocalypse Now", explains at one point that he was trained as a saucier, and was even slated to study at "the Escoffier school" in Paris before being drafted into the Navy--hence his nickname.

In the Futurama episode "The 30% Iron Chef," Bender, after winning the "Iron Cook" competition, declined the title and instead gave himself the lesser title of "Zinc Saucier", which comes with double prize money.

In the film Tropic Thunder, Robert Downey Jr.'s Australian Method actor character Kirk Lazarus who is himelf in character as African-American army sergeant Lincoln Osiris, claims that "Before the war broke out, I was a saucier in San Antonio (which he pronounces as 'San Antone')".
