Calcium aluminium phosphate is the name given to a mineral containing calcium (Ca2+) and aluminium (Al3+) ions with phosphates (PO43-).
The most common use of calcium aluminium phosphate is as a component of some types of baking powder. It acts as an acid at elevated temperatures, reacting with any remaining sodium bicarbonate in the powder to produce further carbon dioxide gas, which produces a further raising effect once cooking has begun.
