Makdous (Arabic: المكدوس‎ or sometimes المقدوس) are oil cured eggplants. Part of Levantine cuisine, they are tiny, tangy eggplants stuffed with walnuts, red pepper, garlic, olive oil and salt. Sometimes chilli powder is added.[1]
