Midwood 's largely Orthodox Jewish section ofBrooklyn ,NY and owned and operated by Domenico DeMarco since 1964. A favourable review in a guidebook put the place in 1999 on the map. Regular slices go for USD 4 and a pie for USD 20. The venture, which opens Tuesday trough Sunday form noon to four and six to nine, should not visited by people who see cleanliness an important feature.Domenico DeMarco (born 1936) emigrated from the
Province of Caserta ,Italy to Brooklyn in 1959. He opened this place with his partner Farina – who he bought out in 1978 - in 1964.The way Mr. DeMarco, who makes 150 or so pizzas a day, is art and to watch him while waiting an hour or so is half the fun. He uses fresh dough and the crispiness of the very thin pizza is near-coal-oven. Mr. DeMarco uses a combination of fresh and canned San Marzano tomatoes for the sauce, extra-virgin olive oil, three types of mozzarella (standard, fior di latte and buffalo). Before serving the pizza, he tops the pie with Parmigiano-reggiano and generous pieces of the basil and oregano, which he cuts using a pair of scissors.
