Mirza-Qasemi

Mirza-Qasemi is a Northern Iranian appetizer of roasted aubergine distinct to the Caspian Sea region. The dish is a mixture of aubergines seasoned with garlic, eggplant, tomato, turmeric, salt and pepper bound together with eggs.
