The jibarito (pronounced hee-bah-ree-to), a specialty of
Chicago , is asandwich made with flattened, fried greenplantain s instead ofbread . It was invented in the early 1990s at the Borinquen Restaurant, a Puerto Ricanrestaurant , by owner Juan "Peter" Figueroa. The original jibarito had a
steak filling, and that remains the usual variety, but other fillings, such aschicken andpork , are common. A proper jibarito also containscheese ,lettuce ,tomato andgarlic -flavoredmayonnaise .References
