Romania andMoldova , made of egg whitesdumplings served with a milky custard sauce. A rare variation uses a thicker sauce, served on top of the dumplings, but usually the sauce is thin, almost liquid (with a higher proportion of milk) and the dumplings "float" on it.The egg whites are beaten with sugar and made into dumplings, which are boiled 1-2 minutes in milk sweetened with vanilla sugar. The dumplings absorb some of the milk and then coagulate due to the temperature. They are removed, and the remaining milk cooled, mixed with yolks and more sugar, then boiled in
bain-marie a few minutes, so that it thickens a bit. The milk and yolks sauce should remain thin enough so that it can be easily poured. The dumplings are added again at the end and then everything is cooled. Lapte de pasare is served cold, usually in a bowl.Lapte de pasăre is also a candy sold in
