Dover sole

Dover sole refers to two species of flatfish:

  • The common sole, Solea solea, found in European waters, the "Dover sole" of European cookery.
  • Microstomus pacificus, found in the northeastern Pacific and called "Dover sole" along the Pacific coast of America.
