*the low-end Calphalon variant Kitchen Essentials.Infused anodization is a patented process by which Calphalon places polymers of nonstick between the pores of the cooking and exterior surfaces. This results in a semi-nonstick surface which has heat and scratch resistance. It's possible to use metal utensils on Calphalon One Infused Anodized without damaging the cooking surface. As of 2007, Calphalon is the only company which uses the
infused anodized process.Calphalon cookware is not compatible with magnetic induction stovetops. The only exception is the Calphalon Contemporary Nonstick-IH line of cookware sold in Australia and Japan.
Calphalon used to produce several other lines of cookware. In the 1990's, it's core product was traditional Calphalon, which looks similar to Calphalon One, but was made of a stick-resistent anodized aluminum. This line has been discontined and replaces with Calphalon One. The former line had different fitting lids and handles that would get very hot (Calphalon sold suede handle sleeves for the long handles). They also produced "Calphalon Professional Non-Stick" and "Calphalon Contemporary Non-Stick". The "Professional" non-stick was more costly, but provided better quality. Both of these lines have also been discontinued.
