Pork grills

Pork grills ("oreilles de crisse" or "grillades de lard" in french) is a popular dish in Québec. It is simply deep fried smoked pork jowls. It is generally served at "cabanes à sucre" (sugarshacks) in spring time, often, but not always, topped with a generous quantity of maple syrup.

The word "crisse" is the Quebec French profanity word for "Christ". The name of the dish thus literally translates to "Christ's ears".

Contrary to what the name implies, it is not religious in any way, and is not made from ears.
