The Leuconostocaceae is a family ofGram-positive bacteria, placed within the order ofLactobacillales . Representative genera include "Leuconostoc ", "Oenococcus " and "Weissella ". Bacteria that belongs to these three genera are Gram-positive, non-spore-forming, round or elongated in shape, are anaerobic or aerotolerant. They usually inhabit nutrient-rich environments such as milk, meat, vegetable products and fermented drinks (Björkroth & Holzapfel, 2006 [Björkroth, J., and W. Holzapfel. 2006. Genera Leuconostoc, Oenococcus and Weissella, p.267 -319. In M. Dworkin (ed.), The prokaryotes: a handbook on the biology of bacteria: Firmicutes, Cyanobacteria, vol. 4, 3rd ed. Springer-Verlag, New York, NY. [http://dx.doi.org/10.1007/0-387-30744-3] ] ). Lactic acid is the main end product of their characteristic heterofermentative carbohydrate metabolism. Thephylogeny of the family of Leuconostocaceae has recently been evaluated by Chelo "et al.", 2007 [Chelo IM, Ze-Ze L, Tenreiro R. Congruence of evolutionary relationships inside the Leuconostoc-Oenococcus-Weissella clade assessed by phylogenetic analysis of the 16S rRNA gene, dnaA, gyrB, rpoC and dnaK.
