Pindzhur

Pindzhur or Pinjur (Macedonian language Пинџур ) is traditional Macedonian relish. It is similar to Baba ghanoush and other eggplant-based spreads. There are several variations of pindzhur. Stir-fried pindzhur and baked pindzhur are the most frequent ones. Pindzhur is usually served with feta cheese and fresh bread. It is made of tomatoes, green peppers, eggplants and garlic. Sometimes walnuts are added.
