Next is Grant Achatz's second Chicago restaurant. It opened in April 2011.[1] The restaurant has received media interest due to Achatz's high profile success at his first restaurant Alinea, as well as its unique "ticketed" format:[2] unlike a traditional reservation system, in which the customer schedules a reservation and pays after the meal, Next sells pre-priced tickets for a specific time.[3] According to Achatz, this will "strip away the...hidden costs of dining out."
Rather than stick with one type of cuisine, Next will completely change its style every few months, focusing on a different time period and part of the world.[4] These will include Paris in 1906, Sicily in 1949, and more conceptual ideas such as Hong Kong in the future.[5] Dave Beran, the chef de cuisine at Alinea, runs the kitchen.[6]
The bar opened along with Next is Aviary, and Alinea chef de tournant Craig Schoettler is in charge.[6]
