Matt Parsons (born 18 June 1973) is an Australian retired professional rugby league player of the 1990s and 2000s. He played at prop for the South Sydney Rabbitohs, then the Newcastle Knights, with whom he won the 2001 NRL Premiership. He now resides in Werris Creek in the Liverpool Plains Shire, and does the Dairy Farmers Milk run in that area.
