Marcus Eaves (born 1981) is an award-winning chef based in London, England. He is the head chef and part owner of L'Autre Pied, which is situated in the fashionable Marylebone district in central London.
L'Autre Pied specialises in French-method cuisine. The restaurant opened its doors on 1 November 2007 led by Eaves, with the backing of his mentors and established restaurateurs David Moore and Shane Osborn of Pied à Terre. Professional background
Eaves' passion for food developed at an extremely young age. His biggest inspiration was his father, who is a chef in a local country house hotel. He always placed a huge emphasis on seasonal, fresh and local produce. Once Eaves finished his GCSE's, he went straight to Stratford-upon-Avon College of Food and Technology, where he studied NVQ Level 1 and 2 in Food Preparation and Cooking.
Eaves's talents were recognized in July 1997, when he was offered work experience in Simpsons restaurant in Kenilworth under Andreas Antona. It was here that Eaves was introduced to the world of fine-dining. During this period, Simpson's earned their Michelin Star and Marcus was awarded the title of Midlands Young Chef of the Year.
In May 2001, Eaves became the Chef de Partie at Lettonie Restaurant, a Two Michelin Star establishment in Bath. He worked here for 13 months with chef-patron, Martin Blunos before returning to Simpson's, where he worked on a temporary basis.
In September 2002, the Landmark Hotel in London offered him a position working with Two Michelin Star chef John Burton Race. He remained at the world-renowned Landmark Hotel until January 2003.
Eaves studied the modern cuisine at Pied à Terre, which has Two Michelin Stars and worked under the direction of Shane Osborn, who eventually became his business partner. Eaves credits Osborn and Moore for the confidence and skills that he gained while working at Pied à Terre, which eventually led to Eaves' running his own kitchen in L'Autre Pied.[2]
Eaves accepted the offer to work under Claude Bosi in the Hibiscus Restaurant in Ludlow. In 2004, during his time with Bosi, his achievements were recognised, when he won The Gordon Ramsay Scholar Award. These awards were the beginning for Eaves, who returned to Pied à Terre as sous chef in 2005, where he remained until the opening of his own restaurant, L'Autre Pied in November 2007.
His talents have been recognized not only in London, but also on the world's stage where he has represented UK gastronomy at leading events. Some of these events include the 2009 Melbourne Food and Wine Festival, 2009's Savour Tasmania in Hobart, both along side partner Shane Osborn and 2009's Indentita Golose in Milan, where he appeared as a speaker representing the "Under 30" rising stars of the UK.
Eaves and his L'Autre Pied Restaurant have achieved major success and critical acclaim and continue to hold their Michelin Star status.[3]
From June 2011, Eaves took over responsibility as head chef at sister restaurant, Pied a Terre following the departure of Shane Osborn.
