- Ayelaa
Ayelaa : It is a kind of Hard liquire specially made by Newar. Thus, it is a homemade hard liquire. The pure ayelaa can burn like sprit with blue flame. Even a small amount of it can cause a burn in your mouth if you are not use to it or not addicted to it. In the newar community, Ayelaa, the liquire plays a vital role in each and every festivals, rituals and formal-informal gathering. It is somehow necessary in the daily life. It once, used to be the way of greeting to guest by offering them in a small pot known as Kholcha, specially made for the same purpose. Jutst like we offer Tea or Coffee nowadays.
Even some people used to consume it along with Baji (rice beaten) as breakfast. It has been scientifically proved that the limited and specific quantity of Ayelaa can be medicine to human body. but excess consumption definately will ruin the life.
The way of making Ayelaa is quite interesting. It is nothing but the another form of steam only. Pure steam of rice and other allied raw materials. The basic raw materials are Jaki (Rice), Sakha: (molasess or raw sugar) and other things. They for the first, boilled in an extreem and continues heat with lots of water on it. The steam came from it is kept in a special pot placed in between the big boiling pot and special V typed cover with space to keep cold water on it. This for the first time extracted steam is pure Ayelaa. It can burn like sprit. This steaming process can be done several times by adding luke warm water on to the pot to boil again but the quality of such decreases every time.
