Besan barfi

Besan barfi is an Indian sweet made from besan (gram flour), condensed milk and sugar. The sugar blends into a creamy texture that comes from the basic mixture, khoya, a traditional Pakistani and Indian dairy confection made from thickened whole milk.

Barfi is generally heated until the milk solidifies and is then placed in molds of different shapes--diamond, square or sometimes round.

Besan barfi is a very common sweet in North India especially during winter. Besan barfi is often garnished with sliced or chopped almonds or pistachios.

Variations include barfi flavored with coconut or mango. Because of its visual resemblance to cheese, besan barfi is sometimes called "Indian cheesecake".

Ingredients

* 200 g Bengal gram
* 200 g sugar (powder)
* 10 g ghee
* 10 g kismis
* 1/2 tsp cardamom powder

Preparation

* Heat the ghee and stir in the besan over medium heat, cooking until the raw smell disappears.
* Make sure the color of the besan does not change. Add the sugar and stir.
* Remove from heat. Mix in the kismis and cardamom powder.
* Spread out on an inverted greased plate. When firm cut into squares. Besan ki burfi is ready to be eaten.
