Eddie Lee "Ed" McQuarters (b. April 16 1943, Tulsa, Oklahoma) is a former defensive lineman (number 61) for the Saskatchewan Roughriders from 1966-1974. He played in four Grey Cups for the Roughriders, winning one in his rookie year.

McQuarters was selected in the eighteenth round of the 1965 NFL Draft by the St. Louis Cardinals after a stellar career at the University of Oklahoma, but opted to go to Canada next season.

McQuarters was inducted into the Canadian Football Hall of Fame in 1988.
