Portillo made her first appearance on MTV on ', and was invited back to participate in '. In the first week of "Revenge", she was the first castmember nominated to the elimination pit, and subsequently, the first to be sent back to the Pit Crew. On the third week, she was nominated back to the pit, where she lost the challenge "Shuttle Puzzle" to Tori Hall, causing her to go back to the Pit Crew. "Real World/Road Rules Challenge"

Portillo has participated in seven Real World/Road Rules Challenges a tied record she holds with Beth Stolarczyk, Tonya Cooley, and Derrick Kosinski On the Challenges, she has often come into conflict with other cast members such as Amaya Brecher, Katie Doyle and Tonya Cooley. Veronica and Amaya quarreled repeatedly during the Challenge 2000, but later became friends off-camera and were nice to each other during the first Battle of the Sexes season. At the "" in 2004, she got everyone on her team to humiliate and sabotage Katie Doyle on the majority of the challenges, which led to a screaming match between Portillo and Doyle, during which Doyle referred to Portillo as a "short, ugly, acne-faced slut", and a "whore". However, since then both women have stated publicly that they have patched up their differences. Veronica has won Challenge 2000, "The Gauntlet", and "The Inferno". In all three, she was a member of Team Road Rules. She has made it to the end of four out of seven challenges, and won three of the four. She was eliminated in "Battle of the Seasons", "Battle of the Sexes", and "Battle of the Sexes 2". She and the rest of Team Bad Asses lost to Team Good Guys in "The Inferno 2". When asked if she plans to do anymore RW/RR challenges, Veronica responded that only time would tell, and that fans shouldn't hold their breath.
