Cavallucci

Cavallucci

Traceable to the 16th century, these chewy anise cookies are called cavallucci, which translates approximately to "little horses"; those sold today are a gentrified version of a pastry which were originally served to servants who worked in the stables of rich Italian aristocrats. This perhaps is where the name comes from.

Popularised in Siena, it is a rich Christmas pastry made with almonds, candied fruits, coriander, flour and uses Tuscan millefiori honey, an essential element for the paste.
