Amatrice is especially famous for the
Sugo all'amatriciana pasta sauce . Numerous cooks of the Popes came from Amatrice, according to some urban legends. In this little village the tradition wants that the original recipe of the sauce was altered outside of the place: still today citizens use to prepare the sauce, using an iron pan, just with olive oil, chopped "guanciale"(= dried pork cheek, not "pancetta"=dried bacon),white wine, tomato sauce, chili, pepper and sheep-milk cheese. The versions outside Amatrice include fresh chopped onion and pancetta (rather than "guanciale").Fractions
