Miami Subs Grill traces its origins to 1983, with the opening of Mr. Submarine, an upscale sandwich shop in Key West, Florida. Later in the 80's, this concept expanded into Miami Subs Grill, offering higher quality and greater variety of food, all cooked to order. The stores offer a balance of the speed and prices of the typical fast food establishments, with the ambiance and variety of the casual dining restaurants. Miami Subs Grill built this concept and expanded rapidly in the 90's, starting in Florida and spreading quickly nationwide, with new restaurant locations, as well as stores in less typical locations, such as schools, highway rest areas and airports. Beginning in 2006, there is also a Miami Subs station inside Dolphin Stadium in Miami. The restaurants featured a distinctive exterior design with South Beach-inspired pastels trimmed with pink and blue neon lights and interiors decorated in a tropical motif.

A 1998 agreement added Arthur Treacher's fish and chips, and another familiar national brand, to the Miami Subs Grill concept. In 1999, Nathan's Famous purchased the chain, bringing the Miami Subs Grill and Arthur Treacher's brands under a common corporate umbrella. That same year, Nathan's finalized its purchase of Kenny Rogers Roasters.

Miami subs are also located in other countries including Turkey & Guyaquil Ecuador one of the very few locations to get free refills on soda-pop in that country. (Even other US Chains there do not offer refills)
