Malabari paratha

Malabari paratha

Malabari paratha is a type of Indian bread, made by Malayalees (sometimes referred as Malabaries), who are the natives of Kerala, one of the southern states in India. These are layered breads, made with refined wheat flour and water and usually enriched with whole eggs. The dough is divided into equally shaped dumplings, and after giving it a rest for proofing, the dumplings are stretched out with both the hands. Then it is grilled on a flat grill (usually called a tawa or a griddle). Usually served with spicy beef fry or chicken curry.
