Toddy is a trademark referencing a cold
brewing system developed andpatented by Todd Simpson in1964 . In the absence of competition in thisbrand space , it has become agenericized reference inAmerican English and many people in the United States today refer to any cold brewed coffee as a "Toddy".The Toddy process requires grinding coffee beans at a coarse setting and soaking those grounds in cold water for a prolonged period of time (usually 12 hours or more). The grounds must be filtered out of the cold water after they have been steeped; therefore, the grounds can either be put in a bag-like filter before steeping or the mixture can be fed through a filter after soaking (similar to the Toddy system). The end result produces a
concentrated coffee that is often diluted with water and or dairy, and served steaming hot, over ice or blended with ice and other ingredients such as chocolate. Conventionally brewed hot coffee is highly acidic, and when poured over ice will be diluted. The resulting beverage offers bitter flavor notes.Fact|date=July 2007 Cold brewed coffee naturally seems sweeter due to its lower acidity (thus requiring less sweetener to achieve desired sweetness) and pouring cold brew over ice does not water down the beverage (in contrast to hot coffee, as explained above). Toddy Products claims brewing coffee by their method reduces the acidity of the coffee by some 67 percent compared to coffee brewed by traditional hot extraction methods. According to Toddy, some 6,000 coffeehouses throughout the U.S., Canada and Australia use their proprietary Toddy Cold Brew System system to make signature iced and iced blended coffee and tea drinks. Many other coffeehouses simply brew hot coffee at double strength, then pour over an equal amount of ice or cold water. Toddy also has sold more than 2 million Toddy Cold Brew System home models. This unconventional method of brewing has been praised by leading food critics from news organizations such as The Washington Post, NBC's Today Show, MSNBC, The Saturday Evening Post, Scripps Howard News Service, Cooking Light, and The Atlanta Journal-ConstitutionFact|date=July 2007. Seattle's Best Coffee Company also is now serving a drink called the "Naughty Toddy". This is not made withalcohol but instead a toddy coffee concentrate that is made by coldbrewing of coffee and adding to whitechocolate sauce, bittersweet chocolate sauce, half-n-half and whipped cream.As of 2006 the Seattle's Best Coffee "Naughty Toddy" has been renamed to "Cold Brewed Marbled Mocha", using the same recipe and trademark Toddy brewed coffee.
