Papalisa, or "palisa potatoes" are a South American
potato normally found inBolivia , as well asPeru . Papalisa is an ancient Andean tuber, containing various minerals and vitamins, including Vitamin C. One of the many varieties of potatoes within Bolivia, they are used in various culinary creations such as stews, soups, meat dishes, or can be served alone. They are generally cut into thin strips.Papalisa were originally used and discovered by the Incas.

Oblong and thinly shaped, they grow to be only a few inches long. Varying in color, papalisa potatoes may be orange/yellow in color with red/pink/purple freckles. In Bolivia, they grow to be very colorful and decorative, though with their sweet and unique flavor they are rarely used for decoration.
