Marillenschnaps or Marillenbrand is a liquor made of apricots; a type of apricot brandy.
Marillenschnaps is produced primarily in the Wachau region of Austria, but a similar liquor is also produced in the town of Kecskemét in Hungary. Marillen is the Austrian term for apricots, which are otherwise known as aprikosen in other German-speaking nations.
The most famous brand of Marillenschnaps is produced by the Austrian company Bailoni, which was founded in 1872 in the Austrian town of Krems an der Donau. Many small orchards produce excellent homemade varieties of Marillenschnaps as well.
The Hungarian variant is known as Barack Pálinka.
Marillenschnaps should be clear with a strong apricot aroma. The alcohol content should be close to 40%. One hundred kilograms of ripe apricots should produce approximately eight liters of Marillenschnaps.
