Alcapurria

Alcapurria is a dish from Puerto Rico made from a mixture of ground plantains and yautía, filled with ground beef or crab meat and deep fried in oil. Many Puerto Ricans enjoy this dish and are often found eating it at the beach with friends. "Alcapurrias" are also one of the many dishes served on the kiosko stands.

Recipe:

INGREDIENTS: Batter 5 green bananas (aka guineos), 1 potato, 1 pound of yautía (aka Taro Root), 1 Plátano (aka Green Plantain), salt, one packet of sazón

Picadillo2lbs. ground beef, 1/2 of a chopped onion, 1/2 chopped green pepper, 1/2 chopped red pepper, 2 tablespoons of sofrito, 1 packet of sazón (found in most supermarkets), adobo

RECIPE

# Peel and grate all of the ingrdients for the batter and mix it into a large bowl. If necessary you may put the contents into a blender to create a "mushier" substance. Once the batter is finished, cover with plastic wrap and refrigerate over night
# Once the batter is prepared you may make the meat filling (aka "picadillo")
#Combine the chopped onion, peppers and ground beef into a large bowl and mix together with hands. Then add sofrito, sazon, and adobo to the bowl and mix once again with hands until the contents are completely blended together.
#Put the ground beef into a "caldero" (aka large pot), or any other pot that you own and allow the beef to fry. Cook until there are no more red or pink spots in the meat. Then drain it and place the cooked ground beef into a large bowl.
#Take one tablespoon of the batter and smooth into your hand. Place a little more than a teaspoon of ground beef into the middle of the batter, place a little more of the batter over the meat and shape it until it is entirely covered in batter.
#Fry in a deep-fryer or in a pan of heated oil
#Cool and serve If cooked in a log fire instead of a regular stove burner, you will get a better taste.
