Copernicus is in "Back to the Future and Back to the Future Part III", he is Doc Brown's pet sheepdog in 1955. He looks identical to Einstein, and is speculated to be his offspring.

Back to the Future

He was barely seen in Part I on November 5th 1955 when Marty McFly was convincing Doc Brown that he was from the future (1985) and that he invented the Flux Capacitor when Doc Brown used the Brainwave analyzer on Marty that evening.

Back to the Future Part III

He was seen at the start of Part III when Marty was stuck in 1955 on November 12th/13th after the 1985 Doc Brown was stuck by lightning and sent back to 1885, also he went with Doc of 1955 and Marty to the Delgado mine and Old Boot Hill Cemetery to uncover the now 70 year old DeLorean and also spotted the grave of Doc Brown when he was shot in 1885 by Buford "Mad Dog" Tannen.
