Acyl-(acyl-carrier-protein) desaturase

In enzymology, an acyl- [acyl-carrier-protein] desaturase (EC number|1.14.19.2) is an enzyme that catalyzes the chemical reaction

:stearoyl- [acyl-carrier-protein] + reduced acceptor + O2 ightleftharpoons oleoyl- [acyl-carrier-protein] + acceptor + 2 H2O

The 3 substrates of this enzyme are [stearoyl- [acyl-carrier-protein] , reduced acceptor, and O2, whereas its 3 products are [oleoyl- [acyl-carrier-protein] , acceptor, and H2O.

This enzyme belongs to the family of oxidoreductases, specifically those acting on paired donors, with O2 as oxidant and incorporation or reduction of oxygen. The oxygen incorporated need not be derived from O2 with oxidation of a pair of donors resulting in the reduction of O to two molecules of water. The systematic name of this enzyme class is acyl- [acyl-carrier-protein] , hydrogen-donor:oxygen oxidoreductase. Other names in common use include stearyl acyl carrier protein desaturase, and stearyl-ACP desaturase. This enzyme participates in polyunsaturated fatty acid biosynthesis. It employs one cofactor, ferredoxin.
