Eriodictyol is a bitter-masking flavanone, a flavonoid extracted from Yerba Santa ("Eriodictyon californicum"), a plant native to North America. [Patricia Kaminski and Richard Katz. [http://www.flowersociety.org/Yerba_About.htm Yerba Santa "Eriodictyon californicum"] . Flower Essence Society.] Eriodictyol is one of the 4 flavanones identified in this plant by the Symrise Corporation as having taste-modifying properties, the other three being: homoeriodictyol, its sodium salt and sterubin.
